Peanut Butter and Jelly Sandwich - Or Is It?

While trying to come up with a healthy snack to eat before my workout today, I remembered an idea that I have seen several times on Pinterest. The idea? Apple sandwiches. Core an apple; cut into thick slices; spread peanut butter on one slice; add fresh strawberries; put another slice on top to create a "sandwich." This was such a refreshing snack. It may look hard to eat in the picture, but it actually held together really well. It seriously tasted like peanut butter and strawberry jelly, with lots of crunchiness from the apple. I didn't want to use up many Point Plus values on this snack so I just kept it simple, but you could make your "sandwich" with all kinds of toppings - honey, cinnamon, other nut butters, actual jelly or jam, raisins, dried cranberries, chocolate chips, you name it! Apple Sandwich
yield: one serving

What You Need
1 apple {I used Macintosh. Use whatever variety you love.}
1 Tbsp. peanut butter
approx. 6-10 slices fresh strawberries

What To Do
1. Core the apple. Cut it into thick slices. {I ended up with 5 slices and just ate the odd slice by itself.}
2. Spread peanut butter on half of the slices. Top with strawberries.
3. Place another apple slice on top of each prepared slice.
4. Enjoy!
