Baked Denver Omelet

This is a recipe that my brother's friend recently made for him. My mom then made it for us, making some changes to make it a healthier version. We all thought this recipe was great. We ate it for dinner with some of my Blueberry Oatmeal Walnut Bread, but it would of course make a great breakfast or even lunch, as well.
Baked Denver Omelet
adapted from: Taste of Home
yield: 4-6 servings

What You Need
2 eggs
1 1/2 cups egg whites
1/2 cup fat free half-and-half
1 cup {4 oz.} Weight Watchers Mexican blend cheese
3/4 cup finely chopped fully cooked ham
1/4 cup finely chopped red pepper
1/4 cup finely chopped onion

What To Do
1. Preheat oven to 400 degrees F. Grease 9-in. square baking dish with non-stick cooking spray.
In a large bowl, whisk eggs, egg whites, and half-and-half. Stir in the cheese, ham, red pepper, and onion. Pour into baking dish.
2. Bake for 25 minutes or until golden brown. Pin It
