Sweet and Spicy Snack Mix

Sometimes when I want a snack, I want something I can munch on. Of course, this can also be dangerous because it can be way too easy to munch a little too much. A recent trip to our local natural foods store yielded almonds, cashews, and banana chips. I've discovered that Honey Nut Chex cereal makes for a very good snack, and that air-popped popcorn is really good - even without all the butter and salt. I took all of these ingredients, plus a few more, and adapted a recipe on the back of the Chex box. The original recipe is called Sweet and Spicy Honey Nut Chex Mix, and it can be found here. {Who knew so many kinds of Chex mix existed?!}
One thing to note: 1/2 tsp. of ground red pepper goes a long way, so if you're not really into spicy, cut back on it.
Also, I bought sweetened and unsweetened banana chips, but ended up using the sweetened ones in this recipe. I'm glad I did because they help to cut the spiciness a little bit. Feel free to use unsweetened if you prefer.


Sweet and Spicy Snack Mix

What You Need
4 cups Honey Nut Chex cereal
approx. 1/2 cup whole cashews {salted or unsalted}
approx. 1/2 cup whole almonds {roasted or not}
3/4 cup-1cup banana chips
approx. 4 cups. air-popped popcorn {lightly buttered and salted if desired}
2 Tbsp. honey
1 Tbsp. warm water
3/4 tsp. salt
3/4 tsp. ground cumin
1/2 tsp. ground red pepper
3/4 cup dried cranberries

What To Do
1. In a large microwave-safe bowl, combine Chex, cashews, almonds, banana chips, and popcorn.
2. In a small bowl, combine honey and water. Add salt, cumin, and ground red pepper. Mix until combined.
3. Pour honey/spice mixture over cereal mixture and stir until evenly coated.
4. Microwave for 3 minutes, stirring after each minute.
5. Stir in cranberries. Microwave 1 more minute. Spread on waxed paper until cooled.
