While you are reading this post, I am most likely in the car traveling from VT to PA, hoping to make the 10 hour trip in time to get to the concert my sister won tickets to. I knew that I would want something to munch on during my long hours of driving, and I also knew that we had a whole bunch of Chex leftover from Christmastime. So, I checked out chex.com. Who know so many varieties of Chex mix existed? After figuring the Points Plus values on a couple of varieties, I settled on Snickerdoodle Chex Mix. It's super fast and easy to make, only has a few ingredients, and is delicious! Give it a try!
Snickerdoodle Chex Mix

Yield: 16, 1/2 cup servings
What You Need
1/4 cup sugar
1 tsp. ground cinnamon
2 cups Cinnamon Chex cereal
2 cups Chocolate Chex cereal
4 cups air-popped popcorn
1/4 cup butter or margarine
What To Do
1. In a small bowl, mix sugar and cinnamon and set aside.
2. In a microwave-safe bowl, heat butter until melted.
3. Pour butter over cereal-popcorn mixture and stir until evenly coated.
4. Microwave on high 2 minutes, stirring after 1 minute.
5. Sprinkle half the sugar mixture evenly over the cereal mixture and stir. Sprinkle with remaining sugar mixture and stir.
6. Microwave 1 minute longer and stir. Spread on waxed paper to cool. Store in an airtight container.
