Skinny Crepe with Fresh Berries and Ricotta


Well, 6+ inches later and the snow is still coming down hard. That being said, I won't be leaving for vacation until tomorrow. You, my blog readers, get to benefit from this delay by having a post today and hopefully tomorrow as well.

Weight Watchers makes a variety of products for its members, one of which is a smoothie mix that comes in several flavors. My WW leader was recently telling me that she has heard of people using the mix and some egg whites and making a crepe. Since I was up at 6:10 this morning {that never happens on a Saturday!} and suddenly had a whole day with nothing happening, I decided to experiment. I found a recipe for this "smoothie crepe" on WW's website. It came out quite well, but was more like a pancake than a crepe as it was thicker than a crepe. I think adding more water would probably result in a thinner final product. I used the chocolate smoothie mix by accident because it somehow ended up in the vanilla smoothie box, but any flavor would do. Have coconut smoothie mix? Try topping with pineapple and coconut. Have strawberry banana mix? Top with fresh strawberries and banana slices.

I topped my crepe with part skim ricotta cheese, strawberries, and blueberries. The topping possibilities are probably endless. I think that I might have enjoyed less ricotta or whipped cream cheese a little better, but this dish was still enjoyable, and every bite I took was better than the one before it.

Weight Watchers Smoothie Crepe
Yield: 1 serving

What You Need
1 package Weight Watchers smoothie mix, any flavor - powder only {Don't actually make the smoothie.}
3 egg whites or 6 Tbsp. Egg Beaters 100% Egg Whites
1/8 tsp. water {or more, depending on the consistency you want}

What To Do
1. In a small bowl, mix all ingredients together.
2. Cook in a skillet sprayed with non-stick cooking spray.
3. Wait to flip until top is bubbling.
4. Top however you choose and enjoy!
