Chocolate Peanut Butter Fudgsicles

I was in the mood to bake something a few months ago when it was still cold outside. However, I was almost out of both flour and sugar. I thought I would make no bake cookies, but then I discovered that one batch has two cups of sugar and a stick of butter. Never mind!
A friend posted this fudgsicle recipe on Pinterest, and when I realized I had all of the ingredients, I went for it, and I'm so glad I did!
Wow - these fudgsicles are delicious. They are pretty rich though, so enjoy them in moderation. Also, feel free to leave the peanut butter out if you want or to subsitute with another nut butter.
Chocolate Peanut Butter Fudgsicles

2/3 cups granulated sugar
1/4 cup cocoa powder
1/4 tsp. salt
3 T. cornstarch
2 1/4 cups milk
1 tsp. vanilla
2 T. butter or margarine
1/2 cup creamy peanut butter

1. In a medium saucepan, whisk together the sugar, cocoa, cornstarch, and salt. Gradually whisk in milk.

2. Cook over medium heat, stirring constantly, until the mixture starts to boil. Boil the mixture for 1 minute. Remove from the stove and stir in the butter and vanilla and peanut butter.

3. Pour into popsicle molds. Freeze overnight.
