Baked Steelhead Trout


Recently, I came across steelhead trout at my grocery store. It looks just like salmon and tastes basically just like salmon, but according to freshmcl.com, steelhead trout is a variety of rainbow trout.
I found it to be quite delicious. I paired it with this summer squash & zucchini casserole that I posted not long ago. Check your local grocery stores for this tasty fish and give this simple but delicious recipe a try.

Baked Steelhead Trout

yield: 5-6 servings

Ingredients
2 large filets of steelhead trout
1 lemon
2 Tbsp. fresh dill or 1 Tbsp. dried
2 Tbsp. butter or olive oil {You can adjust this amount to your preference and dietary needs.}
salt & pepper
crushed red pepper, optional

Instructions
1. Preheat oven to 425 degrees F.
2. Season both sides of fish with salt, pepper, and crushed red pepper if desired.
3. Squeeze lemon on meaty side of fish and sprinkle with dill.
4. Drizzle olive oil or put pats of butter evenly on fish. {An olive oil spray would work nicely as well.}
5. Bake for about 20 minutes, until the fish flakes easily. Be careful not to over-bake as this will result in dried-out fish.
