I'm Back!


My last couple of months have looked something like this: 2 weeks in the hospital, finish my last week of my last school year at the school where I was teaching, pack up my classroom, pack up my stuff at my parents' house, move two hours away, start a new job, deal with more health issues, and unpack. That unpacking? Yeah...still not finished. I need to finish up soon, though, because my roommate moves in in just a few weeks!
Needless to say, it's been rather busy, and as a result, I've neglected this blog. But, I'm back, and I'm bringing you a sweet treat. Overall, I eat pretty healthy {healthily, healthfully??}. Even since I moved and am now totally in charge of what food I'm buying and eating, my fridge is filled with a good amount of fruits and vegetables and lean protein. I still enjoy my treats though (like that $1 single serving ice cream at the grocery store. Probably not really that great of a deal, but then I don't have a whole big container of ice cream staring me in the face, begging to be eaten.}
Anyway, a week or so ago, a friend of mine {who I also told you about here} posted a recipe for peanut butter popcorn. My first thought was that it sounded very sticky, but tasty. In the mood for something sweet tonight, I decided to make it. While it is sticky, it is not as sticky as I anticipated. It is definitely sweet, which is probably good, because that actually kept me from eating too much. This popcorn doesn't set up hard like caramel corn, but stays fairly soft. However, the marshmallow causes the whole mixture to set up enough that you don't feel like you're eating melted peanut butter {or getting it all over your hands.} This recipe would make popcorn balls pretty well too, I believe. I made a couple of alterations to the original recipe based on the ingredients I had, so the original is posted below with my changes in blue.

Peanut Butter Popcorn

yield: 6 servings

What You Need
2 (3 1/2 ounce) packages microwave popcorn, popped {I used air-popped.)
1/2 cup butter or margarine
3/4 cup brown sugar
1/4 cup peanut butter
20 large marshmallows {or about 6 oz. marshmallow fluff}

What To Do
~ Pour the popped popcorn into a large bowl.
~ In a microwave-safe bowl, microwave the butter, brown sugar, and marshmallows on high for 1 minute intervals, stirring between each minute until the mixture is melted and smooth. {This took about 2 minutes for me.} Remove from microwave and stir in peanut butter until well blended.
~ Pour the melted peanut butter mixture over the popcorn. Quickly stir to coat the popcorn before it cools.
