I stumbled across this recipe the other day and thought it sounded like a great snack. Filled with simple ingredients and a little bit of chocolate, this crunchy, sweet, peanut buttery snack is sure to put a smile on your face. Kids will love finding this treat in their lunch boxes and adults will enjoy making {and eating} it time and time again. After my dad tried one he informed me that I should be making these again. Peanut Butter Oat Bites

Yield: 24-40, depending on the size you make
What You Need
2 Tbsp. unsalted butter
2/3 cup creamy peanut butter
1/4 cup powdered sugar
3 Tbsp. honey
1 tsp. vanilla extract
1 1/2 cups Rice Krispies cereal
1 cup quick oats
1/4 cup dried cranberries
1/4 cup chocolate chips
1/4 cup finely chopped walnuts or peanuts
What To Do
1. Melt butter in a medium saucepan over medium heat.
2. Remove pan from heat and stir in peanut butter, powdered sugar, honey, and vanilla.
3. Stir in Rice Krispies and oats and allow mixture to cool. {By the time I added my cereal and oats, the mixture was pretty much cooled already.}
4. Stir in cranberries and chocolate chips.
5. Form mixture into 1-inch balls. Roll in chopped nuts, pressing to coat.
6. Store in refrigerator.
