I first saw the recipe for these biscuits in a Taste of Home cookbook full of lighter recipes. I chose to make these out of all of the biscuit recipes because they were the only ones that didn't have to rise, and I was short on time. These biscuits are super easy to make and make a great addition to any meal. Enjoy!
Parmesan Basil Biscuits
From: Taste of Home
Yield: 1 dozen biscuits
What You Need
2 1/2 cups all-purpose flour
1/4 cup shredded Parmesan cheese {or grated}
2 tbsp. minced fresh basil or 2 tsp. dried basil
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. black pepper
1 cup buttermilk
3 tbsp. olive oil
What To Do
1. In a large bowl, combine flour, cheese, basil, baking powder, baking soda, salt, and pepper.
2. Stir in buttermilk and olive oil just until moistened.
3. Turn onto a lightly floured surface and knead gently 3 times.
4. Roll dough to 1/2 inch thickness and cut with a 2 1/2 inch biscuit cutter.
5. Place 1 inch apart on an ungreased baking sheet and bake at 400 degrees F. for 16-18 minutes or until lightly browned.
6. Serve warm.
