Pumpkin Baked Oatmeal

When I discovered this recipe over at The Sweets Life, I knew it was one I had to try. It certainly did not disappoint, and is a recipe I will definitely be keeping and making again. Perfect for a chilly fall day, it was slightly sweet, warm, moist, and very flavorful. I've already had several requests for the recipe, so here it is! Pumpkin Baked Oatmeal
from The Sweets Life
Yield: 6-12 servings

What You Need
3 cups old-fashioned oats
2 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground ginger
1/2 tsp. salt
2 tsp. baking powder
1/4 cup dried cranberries
1 cup diced apple
1 cup maple syrup
1 1/2 cups milk
1 cup pumpkin puree
4 Tbsp. melted butter
2 large eggs

What To Do
~ Preheat oven to 350 degrees.
~ Grease a casserole dish. {The original recipe doesn't state what size, so I used a 3-quart dish.}
~ In a large bowl, combine the dry ingredients, including the apple and cranberries.
~ In a separate bowl, whisk milk, butter, pumpkin, maple syrup, and eggs until smooth.
~ Add to dry ingredients, stirring to combine.
~ Pour pumpkin mixture into greased dish.
~ Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
~ Serve immediately, with warmed milk and brown sugar for topping. {It's perfectly delicious without milk and brown sugar too!} Pin It
