For awhile, I have seen various recipes for baked eggs floating around Pinterest. Most of these recipes are baked in muffin tins Some are mini quiches, some are baked with hash browns and some are wrapped in bacon. I wanted to try baked eggs this morning, so I came up with my own version. They were very tasty and very healthy! If you are staying away from egg yolks, I'm sure this recipe would work just as well with just egg whites. This recipe is gluten-free, dairy-free, and fits into a "clean eating" lifestyle (avoiding processed foods).
I made 2 eggs, but this receipe could be easily adapted to more servings. If you don't have a muffin tin, I'm sure you could use individual ramekins instead. There's nothing like a healthy breakfast to start your day right!

Baked Eggs
Ingredients
eggs
baby spinach
sea salt and freshly ground black pepper, to taste
Directions
1. Preheat the oven to 350 degrees F.
Lightly spray the muffin tin with olive oil spray. (I used my Weight Watchers oil sprayer, which worked great!)
2. Line each section of the pan (as many as you need) with baby spinach. I found that this worked better when I took off the little stems.
3. Pour one egg over each spinach-lined section and sprinkle with salt and pepper.
4. Bake for 15 minutes, or until the yolk is cooked to your preference.
