Hummus-Apple-Onion-Cheesy Tortillas

I bought some hummus last week and wanted to find some use for it besides dipping carrots in it. Someone had given us some small corn tortillas, so I decided to experiment. The result was pretty tasty, and the recipe could easily be adjusted to suit your tastes.



Hummus-Apple-Onion-Cheesy Tortillas
Yield: 1 serving

What You Need


2 small corn tortillas
2 Tbsp. shredded cheese {I used Weight Watchers Mexican blend.}
1-2 Tbsp. hummus {I used Sabra sun-dried tomato.}
1/2 an apple {I used a macintosh apple.}
sliced onion
pinch of rosemary
deli ham {I used maple ham.}

What To Do
~ Toast tortillas in a small skillet on medium-high heat.

~ Add shredded cheese and leave in skillet until melted.
~ Remove from pan and spread hummus on cheesy tortillas.

~ Saute onion and apple in skillet until warm. Add rosemary.
~ Add apple/onion mixture to tortillas.

~ Put ham in skillet and fry until warm and slightly crispy.
~ Add ham to tortillas.

~ Fold however you choose, and enjoy!
