Wellness

So many common products these days are actually toxic. If a child ingests them, they could die or be seriously injured or ill. They linger in the air while we unknowingly breathe them in, sometimes for hours. Many products also contain carcinogens (they are cancer-causing).

Pumpkin No Bake Cookies



Fall is here! At least, I think it is. I know summer isn't technically over yet, but I am enjoying the cooler weather. I call it good breathing weather because it is much more gentle on my lungs than the summer humidity. Along with those cooler temperatures comes the changing leaves, apples, pumpkins, and fall beverages. {I just had my first-ever pumpkin spice latte at Starbucks the other day. It was delicious!}

I also just bought my first can of pumpkin for the season and am hoping to share lots of pumpkin recipes with you. The first is of which is pumpkin no bake cookies. I'm sure most of you have had traditional no bake cookies - chocolate, peanut butter, oats. Delicious! These pumpkin no bakes are also delicious and contain the wonderful flavors of fall. There is no cooking whatsoever included in this recipe. Not even the use of the stove is required like in traditional no bake cookies. These mix up very quickly and then you can just stick them in the fridge to set. They also seem to freeze well, so you can make them ahead and then just pull them out to defrost as you need/want them.

Spicy Orange Cinnamon Shrimp


Shrimp is one thing that I love to eat but don't buy very often, so it's a great treat when I do have some.
This quick recipe is delicious - citrusy, but spicy. It gave me a great chance to use my new grater/zester that I mentioned in this post about lemon brownies. I didn't have cayenne pepper so I used chili powder and a sprinkle of red pepper flakes.
I enjoyed the shrimp with a sweet potato and cucumbers, but it would be great with rice, as part of a stir-fry, or any number of other ways. It fits into a clean-eating lifestyle perfectly!

Brown Rice Broccoli Chicken Cheese Bake

Happy Labor Day! For those of you who have today off from work, enjoy it!

Phew...that title is a mouthful! This recipe is a good combination of healthy ingredients - lean chicken, brown rice, and broccoli. Yes, it contains cheese, but eating cheese in moderation is perfectly fine. Unless you're lactose intolerant, of course.
I liked this recipe. I didn't quite love it, though. I think that if the ingredients were all mixed together instead of being layered I would have loved it. Also, I think I had my mom's chicken broccoli casserole in the back of my mind, and this is not that. The next time I make this recipe, I definitely plan to skip the layering and just mix everything together.

{Not So} Silent Saturday

Each Saturday, I am hoping to have a "Silent Saturday" post. Basically, this will be a post with a food-related picture but no text - maybe a new product that I found or dish that I made up and didn't create a good recipe to share. My last Silent Saturday post was a picture of a purple pepper, which was a new find for me! Check it out here. I will try my best to make each picture unique.

Peanut Butter Granola

This stuff is addicting. You can eat it with milk as cereal or put it on yogurt or ice cream, but this granola is so good all by itself. The recipe states that it makes four 1/4 cup servings, but I can guarantee that you will find it very difficult to stop at 1/4 cup! I just might have to make it again soon.
It would make a great gift and really does not take long to make at all, which makes it convenient for when you are short on time. If you want to gift this granola but know of someone with a peanut allergy, I am sure you could substitute another nut butter.
I did notice that this granola did not get as crunchy as store-bought granola, but that was ok with me as it did not affect the quality, in my opinion.
