Peanut Butter Granola

This stuff is addicting. You can eat it with milk as cereal or put it on yogurt or ice cream, but this granola is so good all by itself. The recipe states that it makes four 1/4 cup servings, but I can guarantee that you will find it very difficult to stop at 1/4 cup! I just might have to make it again soon.
It would make a great gift and really does not take long to make at all, which makes it convenient for when you are short on time. If you want to gift this granola but know of someone with a peanut allergy, I am sure you could substitute another nut butter.
I did notice that this granola did not get as crunchy as store-bought granola, but that was ok with me as it did not affect the quality, in my opinion.

Peanut Butter Granola
from: Shape
yield: 4 servings

Ingredients
2 Tbsp. peanut butter
2 Tbsp. honey
1/4 tsp. cinnamon
1/4 tsp. vanilla extract
1 c. oats

Instructions
1. Preheat oven to 325 degrees F. Spray cookie sheet with non-stick cooking spray and set aside.
2. Combine peanut butter and honey in a bowl and microwave until peanut butter melts {approx. 20 seconds}. Stir.
3. Stir cinnamon and vanilla into peanut butter and honey mixture. Add oats and stir until oats are completely coated in peanut butter mixture.
4. Spread oats onto prepared cookie sheet and bake for 7-8 minutes until granola is slightly browned. Let cool until granola is crunchy. Pin It

  1. This stuff is delicious! So far I've just been snacking on it by the handful, but I think next time I make it (which will be soon!) I am going to try to put it into ball into muffin tins to make little granola bites. I'm not exactly how sure how well they will hold up so I might have to make a couple modifications, but I think it's worth a try! :)
